Dernauer HARDTBERG Spätburgunder

2021

Traubensorten Pinot Noir
Trinktemperatur 16° - 18°

The vines were planted here in the early 1980s on greywacke with traces of sulphur - yes, just like the "Sparifankerl". The Hardtberg's winemaking process sounds a little more "modern", at least at first glance, as the fruit was only partially destemmed and cold maceration was prescribed instead. Yes, that's actually it with the "modern". Everything else is as unspectacular as with all other wines. And yes, I think that's exactly how it should be. I don't like experimental juices. Why turn something that delivers great results completely on its head? The wines are great and that confirms the correctness of the process, the spontaneous fermentation with natural yeasts, the ageing in old wooden barrels made from regional oak and the restrained sulphurization shortly before bottling. Nevertheless, this wine is somewhat reductive at the beginning, then wonderfully red berry, floral and cool in aroma. Great! Elegant, then powerfully structured with juicy tannins and a wonderful freshness that focuses the wine and gives it a juicy and rich finish.
