The "Les Moulins" wine changed more and more, built up complexity, became denser but also more precise and began to join the ranks of the great Chenin Blancs of the Saumur region. Romain's assessments were spot on, and Le Bourg turned out to be a fantastic Chenin Blanc site. And now the time has finally come and the wine bears the name of the Le Bourg vineyard. It will probably require a moment's patience before it reveals all its qualities. But we want to give it time and in the meantime we'll pass the time with the «Domaine Blanc», won't we? In a year or maybe two, Le Bourg 2021 will turn our heads with a hellishly neat mix of herbal aromas and Tarocco orange flavors, really ripe and juicy. The wine will take the palate by storm, lying densely and powerfully on the tongue and nestling against the palate, completely weightless. Its finish will be as precise as a Swiss watch, salty and mineral.
