Sauvignon Blanc

The idea for this wine came about when we were tasting our way through Jean-Pierre's cellar with Jacques Tatasciore. There was this incredibly sharp, delicately aromatic white with a density, not to be confused with weight, and an incredibly precise freshness that fascinated us all. Wow. We put it together almost ad hoc from different batches. One part of this wine matured gently and aroma-neutrally in one of these concrete tanks in the form of an egg and the other part matured in used demi-muids. Jacques had the idea of bringing these two wines together. After just a few minutes, the ratio was decided: two parts concrete and one part used demi-muid. The wine is not too loud on the nose, fruit and spice balance each other out and the wine is unspeakably beautiful on the palate. The result is a truly great Sauvignon Blanc!
