Yeast brandies are no longer available to buy very often. Mike Rudolph is a lover of these fine, fragrant brandies and goes to great lengths every year to obtain a fresh, clean brandy. He ages it in chestnut barrels, but leaves it to rest. This makes it round and a little plump. Nevertheless, it is light and lively in the glass. A wonderfully refreshing brandy.
