Simple, no, entry-level wines - in this case only the appellation, the name "simple" - are known to reveal a lot about terroir, ambition, talent and ultimately the passion of the winemaker, which in the case of Cassiopée is enormous. As the name of the winery suggests, Talloulah and Hugo are reaching for the stars. It originates from a vineyard with vines of almost biblical age, whose loooong roots supply the plant with wonderful minerals, allowing grapes to grow that offer a spectacle of aromas that only the greats of the Gold Coast can match. Plums, wild berries and even cassis combine to create a breathtaking potpourri, which is repeated on the palate, but soon gives way to a great, robust structure that carries the wine, sustains it for a long time and makes it incredibly attractive. Of course, the wine will require a little more patience until it comes into its own, but then, yes, then it will be far too late to stock up on it.
