The aroma of the Sazenay is similar to that of the Clos des Touches, I mean similarly fascinating. While Clos des Touches is aromatically more on the red berry side, it is the dark berries and fruits that take the lead in Sazenay. Well, cherries are also present, but they tend to provide the basis. What comes out wonderfully in the Sazenay are great peony-rose scents. Can you imagine how lush this wine smells? I can tell you it's sheer madness.
So much for the high notes. The bass is formed by the cocoa aromas together with these fine but stylish roasted aromas, which come from Chassin's barrels - don't worry, the wine has enough substance to pack away these aromas, you just have to give it some time. The wine spreads out on the palate with plenty of pressure, showing a firm but fine structure, a great freshness and a super-delicious fruit in the center. Bautista, Mercurey at it's best!
