Remember for the rest of your life: rosé champagne is not just for ladies! So much to start with! Nicolas Maillart vinifies around seven percent of the wine as red wine and leaves the juice on the skins for a good 52 hours, from which it releases its color. The remaining Pinot Noir, which makes up 60 percent of the wine, is pressed directly and fermented without skin contact. 40 percent of the wine is Chardonnay. So much for the composition. And now, as promised, to the aromatics, the look and feel, so to speak: The color, I would say a bright salmon pink, delicately lightened. The bouquet builds up again and again, entertaining the nose at the highest level with aromas of freshly picked strawberries, crushed and mixed with whipped cream, or fresh bread and red apples. Divine! On the palate too! Mousse, body and freshness in harmony! Chapeau!
