Hellishly hot, this Brut Platine! Maillart is daring because he lets wild yeasts ferment his wines. And although I don't usually like it when champagnes are matured in wooden barrels, I really like Maillart's wines. That speaks volumes for the winemaker, who has a fine hand with wood. Aromas of ripe fruit literally jump out at you, yellow fruit. Hazelnut, candied Amalfi lemons, toasted brioche and bearded apple aromas complete the fresh, yellow-fruity fragrance. On the palate, the wine builds up a lot of density and pressure, shows a great smoothness and a delicate bitter note on the finish, which I really like because it tars everything out again after a wonderfully long retro. The mousse is wonderful, not too coarse and lingers wonderfully. A wine like this is only available in Champagne from Roses de Jeanne.
