So, now to this wine, which has already caused quite a stir – of course it's a sparkling wine! No, seriously, this is a serious, really terrific sparkling wine that you don't often find in Switzerland. Pinot Noir, without dosage, bone dry. The wine has turned color very slightly, it smells heavenly of ripe cherries, with a hint of yeast and a little brioche – why brioche, I can't say... maybe my nose is just shot. But that's not really important, because the wine is just insanely complex, wonderfully vinous and only a little “bubbly” (just how I like it) with a robust structure, fine tannins and a great length. The finish is so juicy that you have to swallow again because your saliva is pouring in. Try this great sparkling wine. I am sure you will enjoy it very much, provided you like it complex and really dry!
