Frank aged the Insomnia "sur lattes" for more than 100 months. Such long ageing on the lees turns the pérlage into a mousse that allows small, fine CO2 pearls to float through the wine, significantly changing the mouthfeel of the wine and, in my opinion, making it more refined and elegant. Of course, the aromas of the wine also change over the many months. Nutty nuances emerge and fresh fruit notes transform into aromas of cooked fruit. Insomnia 2014 is dominated by a delicious baked apple, just like my mother used to prepare for us as a snack on the stove in winter. It smelled wonderful and it is precisely this aroma that tickles my taste buds and makes me indulge. Somehow there is also something nutty in this wonderful bouquet. The wine is hellishly dense on the palate and demonstrates its power in an impressive way. But in the end, the acidity balances the wine, puts it firmly on its feet and lets it dance. A complex wine that will delight true sparkling wine lovers!
