Of course, everything here is harvested by hand into small crates. That leaves the cellar work, which in Thibaud's case can be explained quite quickly: generous triage, gentle processing, natural yeasts, little sulphur, little new wood and patience. Thibaud dedicates this wine to his late mother and in order to keep her memory as high as possible, only the finest, best grapes are good enough. It goes without saying that he only makes this wine in the very best years. Its fragrance is crystal clear, pure and unadulterated. Focused, yet with plenty of power, a good structure and an indescribably salty, even crispy finish, this wine belongs to the premier class! Whoever can get their hands on one of these can count themselves lucky!
