Roman's version of the Grand Maître is made from the original Graubünden white wine grape par excellence, which is harvested a little later. It is fermented and matured spontaneously in Swiss oak. Around half of the barriques and demi-muids used are new. The Completer Grand Maître is matured on its lees, which are repeatedly stirred for a certain period of time. But what is the effect of the stirring, this batonnage? It makes the wine more complex, denser and lends it additional smoothness. A good thing, as you will see. It's wonderful how the wine smells of herbs, ripe yellow apples and delicate quinces. Everything is in a state of flux, constantly reassembling itself and surprising you with ever new compositions. The wine also makes a powerful impression on the palate. Precise, with a great interplay between extract and perfectly dosed acidity, the wine entertains at the highest level and ends in an ultra-long, juicy finish.
