The grapes for this great Pouilly-Fumé grow in the commune of Tracy, in a rather late-ripening vineyard planted in 1987, on just half a hectare of flinty clay and Kimmeridgian marl, i.e. on very chalky soil. It is wonderful how it develops a delicate aroma of chamomile, lime blossom, redcurrant and cherry blossom and, with a little more air, a flinty scent that is characteristic of the best wines of the appellation - these are the high notes on the nose. The low notes, i.e. the bass, take the form of honey, wax and fine quince aromas. The attack on the palate is quite powerful. Are those bergamots I can taste? Indeed! And there is also pink grapefruit. Wonderful! As you can see, the freshness, or in other words the acidity, soon takes over and lets the wine dance across the palate before it finishes with a long, mineral, finely salty finish that makes the saliva flow in masses. The result is a feeling of bliss that is unfortunately very rare. The "Sleeping Beauty" is one of the most brilliant wines from the Sauvignon Blanc variety that I know.
