Wonderful! This is exactly what a mature wine smells like! As at Clos Rougeard, the Chenin Blanc vines at Domaine du Collier are rooted deep in the tufa in what is perhaps the best location in the appellation, in Brézé, where everything is done according to the principles of Rudolf Steiner, with the sole aim of maximizing the quality of the wine and the health of the soil, the winegrower and ourselves. In the deep, cool tufa cellar, the hand-picked grapes ferment spontaneously, i.e. without pure yeasts. In aroma-neutral barrels, without the addition of sulphur, Antoine gives the wine the time it needs to develop until the wine is intense and crystal clear, beguilingly mineral - damp chalk - and enormously complex in aroma, moving through the palate with "grip" and personality until it starts its phenomenally mineral, salty finish. Wow, this is incredible. It's just a shame that there are so few of them!
