Limestone | clay marl | scree | south-southwest exposure, again in one of these terrain incisions, i.e. Recuées, in the Val de Sorne. This time it is the Savagnins that grow this divinely delicious, great white wine. Of course, here at the Pigniers, the grapes are all carefully placed in small plastic crates during the harvest so that the grapes do not burst under their own weight and begin to ferment in the vineyard or on the way to the cellar. The wine is fermented and matured in a concrete tank, which is shaped like an upright, oversized chicken egg. Concrete, aroma-neutral yet porous, is a fascinating material with great potential. The aroma of this wine is indescribably pure, clear, characterized by a fascinating interplay of fruit and spice, to which a mineral base constantly adds depth. Power, natural, acidity, of course, structure, but secure. Juicy and wonderfully harmonious, the wine finishes on the point. Precision, elegance and refinement, all in one! Too bad there isn't more of this delicious wine!
