Admittedly, wines that mature under this delicate blanket of yeast are not everyone's cup of tea and even connoisseurs will not want to pour themselves such a wine every day. It is not as easy to enjoy as others, you have to give yourself over to it, engage with it, but then wines like these from the Pigniers, which are completely free of oxidative aromas, are a real treat. Imagine a glass of this Savagnin with Stefan Heilemann's salmon trout tartare - simply divine; I can assure you, because I tried it myself and the combination was nothing less than sensational! Straw yellow is the color of the wine, candied citrus fruit aromas penetrate the initially omnipresent yeast aromas more and more and suddenly let a scent of black walnuts shine through, followed by a delicate anise aroma, a combination that adds another dimension to the whole bouquet. Candied citrus fruits also set the tone on the palate, where the wine moves with a lot of energy, shows good structure and finishes precisely to the point. This is a PICTURE BOOK wine that you must try if you want to experience all that the Jura has to offer!
