Clos de la Hutte is the heart of Thibaud's vineyards and is located right next to his modern winery - the building is new, that's what I mean, Thibaud is anything but a tech gig. A veritable Clos, by the way, with a wall and all. Of course, the "selection massale" is used here, but the vines in the Clos de la Hutte are all direct bearers, hard workers, because the humus layer is a maximum of 20 centimetres thick, then comes the stone, slate in this case. Naturally, the grapes are harvested when ripe, no more "winemaking by the numbers". But don't worry, here you can still make wines from phenolically ripe grapes without any risk of losing balance. This aroma ... ahhhh ... soooo beautiful, a little honey, a little quince, maybe even a little pineapple and mandarin and something spicy is also present. Delicate, almost fragile, like a mist - I imagine that's what a mist could feel like - the wine moves through the palate, straightforward, with a juicy, salty, mineral, endless finish in focus.
