Soave Classico Calvarino

If you ask me which is my favorite Soave, I will ALWAYS say Calvarino. That has always been the case. I still remember the first time I went to Gualtiero Marchesi, Italy's most famous chef at the time, with my wife, who was still my girlfriend at the time. We tasted Calvarino and La Rocca side by side. And even then, I opted for Calvarino. Not because it's better, no, because it simply appeals to me more. It is aged in large, largely aroma-neutral wood and gives me more, or I should say more directly, the terroir, together with this unique interplay of aromas between Ganny Smith apples, vineyard peaches and delicate, almost somewhat subliminal elderberry notes. The wine is clear on the palate, builds up pressure without losing its shape and finishes juicy, clear, finely salty, which is an expression of its minerality and crisp! Great!
